Ingredients for chicken biryani recipe:-

1. Firstly we will need 1 kg chicken, large pieces with bones

2. Then we will need 700gms basmati rice

Ingredients for cooking chicken:-

1. Firstly we will need 400 gms sliced onion (around 5 medium sized onion)

2. 2 tbsp ginger garlic paste

3. 4 medium tomatoes sliced

4. 6 slit green chilies

5. 1 cup chopped coriander leaves

6. 1 cup chopped mint leaves

7. 1cup whisked curd or plain yogurt

8. 5 tbsp ready made biriyani masala

Ingredient for cooking rice:-

1. 1/2 tbsp shah jeera (caraway seeds)

2. 4 green cardamom

3. 4 cloves

4. 2 pieces cinnamon

5. 1/2 tbsp saltwater to boil the rice around 2.5 litres

6. Around 10 to 15 mint leaves


1. So firstly we have to clean and wash chicken pieces.

2. Drain the water or pat dry.slice the onion and tomatoes.

3. Slit 6 green chilies.

4. Chop 1 cup coriander and 1 cup mint leaves

5. Whisk the yogurt and set aside

6. Wash and soak the basmati rice for 30 mins.

To cook the chicken:-

1. So firstly heat 6 tbsp oil in a heavy bottom pan and add the sliced onions.

2. Then fry on high heat for arround 12 minutes till the onions are light brown.

3. Add the ginger garlic paste and fry on low heat for 2 minutes.

4. Now add the chicken pieces, mix and fry on high heat for 2 to 3 minutes.

6. Add the ready made biryani masala, mix and fry on medium heat for 3 minutes after adding a splash of water.

7. Readymade biryani masala usually contains salt hence salt is not added while cooking the chicken in this recipe. Do check if the biryani masala you are using has salt in it.

8. Now add the sliced tomatoes, mix it well and cook on medium to low heat for 4 to 5 minutes till it softs.

9. Keep the heat on low and add the whisked curd or yogurt. give a mix and then add the chopped coriander and mint leaves.

10. Cook on low heat for 2 minutes till oil separates .

11. Cover and cook on low heat for arround 20 to 25 minutes till chicken is tender. Remove lid after 10 minutes, give a mix and close the lid again.

12. ry up any access water to get a thick greavy.

To cook the rice:-

1. Take one more heavy bottom pan and add around 2.5 liters of water. Place it on high heat.

2. You may include the water in which rice was soaked in this 2.5 litres for enhanced flavour and taste.

3. Once the water starts to boil or bubble, add shah jeera 1/2 tbsp, 1/2 tbsp salt and 2 pieces of green cardamom.

4. Stir it well to dissolve the salt completely. The water must be very salty.

5. Once the water starts boiling, add the strained basmati rice  and stir it well.

6. Continue to boil it on high heat, stirring few items very gently to not break the rice.

7. After 8 to 9 minutes when the basmati rice is almost done(90%) remove it from heat and strain the water . Set it aside.

Layering the rice and cooked chicken:-

1. Take a heavy botom pan and spread half the cooked rice as the first layer.

2. Now spread the cooked chicken with greavy on top of the rice uniformly.

3. Next spread the balance rice as the top layer.

4. Sprinkle some mint leaves on top of the rice. Close the lid and cook on low heat for 7 to 8 minutes.

5. Allow it to rest for arround 20 minutes .

6. Once you open the lid, mix the chicken and rice evenly.
