For Jackfruit Marination:-

1- 1 kg peeled and diced jackfruit.
2- 2 tbsp mustard oil.
3- 1 tsp Degi red chilli powder.
4- 1 and half tsp Turmeric powder.
5- Salt to taste.

For Pressure Cook Jackfruit:-

1- Water as required.
2- Salt to taste.
3- 2 no.of Bay leaf.
4- 2 to 4 cloves.
5- Marinated jackfruit.

For Kathal Rara:-

1- 1/3 cup mustard oil.
2- 1 tbsp oil.
3- 2 no.of Dry red chillies.
4- 1/4 tsp Fenugreek seeds.
5- 1 and half tsp cumin seeds.
6- 1 tsp fennel seeds.
7- 4 to 5 no.of Black pepper corns.
8- 1 no.of Bay leaf.
9- 5 Medium onions sliced.
10- 2 no.of Cloves.
11- 1 tsp Turmeric powder.
12- 1 tsp degi red chilli powder.
13- 2 tsp Coriander powder.
14- 1 tbsp Ginger Garlic paste.
15- 1 tbsp chopped Tender coriander stem.
16- 2 no. Of less spicy and chopped green chilies.
17- 1/4 cup curd, beaten.
18- 1/2 cup fresh tomato puree.
19- 1 cup water.
20- Fried jackfruit,pulled.
21- Salt to taste.
22- 1/2 tsp sugar.
23- 1/3 cup water.
24- Oil for frying.

For garnish:-

1- Coriander spring.

Process To Make Kathal Rara:-

For Jackfruit Marination:-

1- Firstly, apply a generous amount of mustard oil on the hands, knife and on the chopping board.
2- Cut the jackfruit from the middle into two halves.
3- Remove the inner sticky white core of the jackfruit.
4- Separate the pod from the skin of the jackfruit and cut them into cubes.
5- Keep the chopped pod cubes in a parat,add mustard oil, degi red chilli powder, turmeric powder, and salt to taste.
Keep it aside for 20 to 25 minutes.

For Pressure Cook jackfruit:-

1- In a pressure cooker, add water, salt to taste, bay leaf, cloves, marinated jackfruit and cover it with the lid and cook it for 2 to 3 whistles or until tender.
2- Keep it aside for further use.

For Kathal Rara:-

1- In a handi, heat mustard oil, add dry red chillies, Fenugreek seeds, cumin seeds, black pepper corns, bay leaf and let it splutter.
2- Add onions, cloves and saute it 3 to 4 minutes or until translucent.
3- Add turmeric powder, degi red chilli powder, coriander powder, ginger garlic paste and cook it for 2 to 3 minutes.
4- Add coriander stems, green chilli, add curd and cook it well.
5- Add tomato puree, water and mix it well.
6- Add jackfruit, salt to taste, sugar, water and simmer it for a while until cooked well.
7- Transfer it to a serving bowl or dish and garnish it with coriander spring serve hot with roti.

For Frying:-

1- In a kadai, heat oil, add cooked jackfruit and fry until golden brown.
2- Transfer it to a plate or tray and keep it aside for further use.
