For Tempering:

1. 2-3 tbsp Ghee.

3. 1/2 inch cinnamon stick.

4. 2 Green cardamom.

5. 1 Black cardamom.

6. Marinated vegetables.

7. Few mint leaves.

8. 3 cups Basmati classic soaked for 20 min.

9. 4 and a half cups hot water.

10. Few fried onions.

11. 2 green chilli into half.

12. A pinch of garam masala.

13. Salt to taste.

14. 1 tsp kewra water.

15. Few saffron strands.

16. 2 tsp Ghee.

For raita

1. 2 medium size boiled potato, small cubed.

2. 1 medium chopped onion.

3. 1 medium chopped tomato.

4. 2 chopped green chilies.

5. 1 cup beaten curd.

6. 1 tbsp chopped coriander leaves.

7. 1 tbsp chopped mint leaves.

8. Salt to taste.

9. 1/4 tsp suger.

10. 1/2 tsp roasted cumin powder.

11. A pinch of degi red chilli powder.

For garnish:

1. Fried onion.

2. Coriander spring.

For Marination

1. In a large bowl,add carrot, french beans, cauliflower,paneer and fried onion.

2. dd fried onion oil,curd, fresh mint leaves, fresh green peas,salt to taste.

3. Add green chilli,degi red chilli powder, turmeric powder, coriander powder, fresh coriander spring and mix it well.

4. Add ginger garlic paste,fried onion oil and marinate everything well keep aside for further use.

1. In a large cooker,add ghee once it’s hot,add bay leaf, cinnamon stick, cloves,green cardamom, black cardamom let it splutter.

2. Add marinated vegetables and saute it well.

3. Cover it with a lid and cook on medium flame for 2 to 4 minutes.

4. Add a few mint leaves, soaked basmati rice,hot water,fried onion, and green chilli.

5. Sprinkle some garam masala,salt to taste,kewra water,few saffron strands,ghee.

6. Cover it with a lid and cook over medium flame for 1 whistle.

7. Let it cool at room temperature until pressure inside the cooker goes down naturally.

8. Open the lid and fluff the rice with a fork.

9. Tansfer it to a serving plate or bowl.

10. Garnish it with coriander spring and serve hot with raita.
